Method
- Chop the adzuki beans in a food processor. They don’t need to be very fine.
- Mix the chopped beans with the quinoa and seeds and add the spices. Mix well.
- Finally, add the cassava flour and mix well again.
- Shape the burgers with a mould and place them on baking paper.
- I kept them in the fridge for a while before frying them in a little oil.
To serve
- Cristallino burger buns, 100% natural and vegan
- Mixed salad leaves
- Tomato
- Crispy caramelised onion (cook the onion over a medium-low heat with oil, salt and a pinch of sugar until caramelised, then turn the heat up a little so it crisps)
- Vegan mayo (100 ml sunflower oil, 50 ml soy milk, salt and lemon juice)
- Diced roasted and lightly fried sweet potatoes with vegan mayo and a pinch of chilli powder.
